Why did you start creating these kits?
Originally, we had the idea to give our wedding guests some gorgeous home brewed tonic water as the wedding favour.
As we were already producing our own wedding cake, producing 120 batches in the days before the wedding proved too challenging a task and the idea was cast aside in favour of chilli oil. Instead we began gifting tonic to friends and family.
We’ve since perfected our brew, so that you can brew your own too.
How much does each kit make?
Each BrewYo kit prepares approximately 600ml of syrup. When mixed with soda, this is approxmiately 4 litres of tonic water.
We recommend a 1:6 ratio, syrup to soda which you can adjust to taste.
What’s in each kit?
Just add sugar and water.
Our standard kits come with the raw tonic making ingredients, instructions, and specialty coffee filters to process the brew. We use our special formulated cold brew method, so the only cooking required is the production of sugar syrup.
What do I keep in the fridge?
Our tonic brew recipe is two stages. We recommend producing the syrup and keeping this in the fridge rather than the extract or the syrup mixed with soda.
1) Make tonic syrup: infuse > filter > add syrup
2) Serve tonic water: mix syrup with soda. Use 1:6 ratio or tweak to taste (you can store this in the fridge, but to ensure fizziness, the syrup will keep better)
Can I change the sugar level or make a 0 sugar tonic?
We use sugar in our recipe as it is the best agent to balance out the bitterness of the aromatics whilst enhancing longevity of the tonic syrup. After mixing the syrup with Soda water the tonic water is about 6g sugar per 100ml.
If you wish to customise the sugar level, you can. We recommend keeping the liquid to extract ratio 1:1 & using slightly more sweetness level as per the recipe. If you’d like specific instructions or to discuss your needs, reach us here.
I received this extra bag of garnishes, but the instructions don’t mention them.
As part of a 2020 special, we included complimentary orange slices & juniper berries to garnish your tonic water. Just add it to your drink when you’re ready to enjoy!
