No sugar syrup (allulose & Erythitol)

The world of non-sugar syrups is wild when it comes to producing your own tonic syrup as you need to balance flavour, ratio, shelf life and personal preference around alternative sweeteners.

Here's two methods that we'd recommend with your brew.

Method 1: Allulose syrup

Make and drink within 2 weeks

Unlike erythritol, allulose won’t crystallise if you make a simple syrup with it. Like erythritol, it occurs naturally and is very unlikely to cause digestive upset.

As allulose is less sweet than sugar use the following method for your brew.

  • Dissolve 260 grams of Allulose into 135ml water over low heat until sugar is completely dissolved. Allow to cool
  • Add syrup to the filtered tonic brew and stir

Adding Allulose in this way will be less sweet tasting than brew yo is intended, if you're finding some bitterness, we recommend adding additional Erythitol on serving to enhance deliciousness (adjust to taste).

 

Method 2: Erythritol

Better balance, but best consumed within 24 hours

Erythritol is highly rated as a sugar replacement however it quickly crystallises when used in place of a sugar syrup.

  • Whisk 105 grams of erythritol and 1.5 grams of Xanthan gum powder in a pot
  • Add 175ml distilled water and cook over medium heat until hot. 
  • Allow to cool
  • Add syrup to the filtered tonic brew and stir
  • Consider adding a shot or so of vodka or gin to extend shelf life, be sure to discard if there is any discolouration
  • Add liquid sweetener 

Again, this syrup will be less sweet tasting than brew yo is intended, if you're finding some bitterness, we recommend adding additional Erythritol on serving to enhance deliciousness (adjust to taste).

On the downside, erythritol is very prone to crystallisation. This means that is doesn’t like to stay in syrup form for long. So while you can make a simple syrup with erythritol granules, it won’t take too long (usually less than 24 hours) before it will begin to solidify.

If you want to substitute erythritol for simple syrup, you should either use erythritol in granule or powder form, or make a syrup and use it immediately.
